Ingredients:
1 egg
1/2 C. milk
1/4 C. salad oil
1 1/2 C. flour
1/2 C. sugar
2 tsp. baking powder
1/2 tsp. salt
Directions:
Fill paper-lined muffin cups 2/3 full. Bake at 400° for 20-25 minutes.
Variations:
Chocolate Chip: add 2/3 C. chocolate chips
Blueberry: add 3/4 C. well-drained blueberries
Apple: add 1 C. grated apple and 1/2 tsp. cinnamon, top with nut-crunch topping: 1/3 C. brown sugar, 1/3 C. chopped nuts and 1/2 tsp. cinnamon. Bake 25-30 minutes.
Jelly: Fill cups 1/2 full, drop one tsp. jelly in center of each, add batter to fill 2/3 full.
