Great-Grandmother Neutzling's Pepper Relish

Ingredients:
12 sweet green peppers
12 sweet red peppers
12 onions
2 C. apple cider vinegar
3 ½ C. sugar
3 T. salt
3 T. celery seed
2 T. chili powder
2 T. mustard seed

Directions:
Chop cleaned peppers and onions. Cover with boiling water and let stand for 5 minutes, then drain. Add vinegar, sugar, salt, and remaining spices. Boil mixture 5 minutes. Pour into clean hot pint canning jars and seal immediately with lids and rings, then process 5 minutes in a boiling water bath. Makes 6 pints.
