Katie's Beef Stew

Ingredients:
2 lb. stew meat (beef chuck cut into 1 ½-inch cubes)
1 onion, peeled and quartered
1 T. salt
1/4 tsp. pepper
6 carrots, peeled and sliced
2 lb. white potatoes, peeled and thick sliced
1 16-oz. can tomato pieces or tomato juice

Directions:
Place stew meat in a large pot. Cover with 2 cups water, onion, salt and pepper. Cover; simmer 1 ½ hours or until meat is tender, stirring occasionally to keep from sticking.  Add vegetables and tomato pieces. Cook 45 min longer or until vegetables are tender.
