Pam's Potato Soup

Ingredients:
2 slices bacon
½ onion, chopped
1/3 C celery, chopped
3 C diced potatoes
3 C water
1 tsp salt
¼ tsp pepper
1 tsp chicken bouillon
2 T flour
3 C milk
(or use one can cream of chicken soup, reduce to 2 C milk and omit the bouillon and flour)
8 - 12 oz. Velveeta, cut up

Directions:
Cook bacon in soup pan.  Remove bacon. 
Add onion and celery and cook until tender.
Add water, salt, pepper and bouillon.
Add potatoes, cover and and simmer for 15 minutes.
Add cheese.  Stir until melted.
Blend flour with a little of the milk.
Stir into hot mixture and cook, stirring until slightly thickened.
Add remaining milk and heat.
Sprinkle with crumbled bacon.


Easy alternate recipe with mashed potatoes:
¼ C butter
¼ tsp celery salt
¼ tsp onion powder
2 C mashed potatoes
2 C water
2 C milk
1 tsp salt
¼ tsp pepper
1 tsp. bouillon
8 oz. Velveeta
